When Champagne was decimated by phylloxera in the late 1800s, the Dechelle family just so happened to be some of the region’s most respected vine grafters! That kept them supremely busy for the next couple of decades and they helped to replant much of the surrounding area with new vines – essentially saving Champagne – so yeah, absolute saints in my book.
